The Shrimp Cocktail Needn't Be Reserved
For An Elegant Dinner Party

by: Bobby McDonald

Certainly, the Shrimp Cocktail has traditionally spelled elegance and always adds an element of class, as the perfect appetizer for a dinner party, wedding reception, or special occasion. However, if most of you are like me, you love the taste, flavor, and goodness of shrimp cocktail and enjoy seafood on most any occasion, so why not "think out of the box" and try serving shrimp cocktails with some imagination at your Super Bowl Party or the next time that you have guests over for a game of 42 or bridge?

There's really nothing much easier than putting together a shrimp cocktail, now that you can purchase pre-cooked and shelled shrimp, if you're in a hurry, and even purchase your shrimp sauce, pre-made, "in a pinch!"

But, if you're looking for some great shrimp cocktail recipes for that Super Bowl Party, try the following to have your guests asking for more.

Festive Shrimp Cocktail

For the shrimp:

For the cocktail sauce:

(Note: Heinz chili sauce – it’s not very spicy and has a nice sweet taste. If you use other type of hot chili sauce,

just start with a couple tablespoons first, then taste and adjust.)

Directions

1. To prepare the cocktail sauce, mix all the cocktail sauce ingredients together in a medium bowl and refrigerate until ready to serve.

2. Have a large bowl of ice water ready and set near the sink. To a 8-quart pot of water, add the Old Bay, lemon, granulated garlic, garlic, chili powder, and salt. Bring to a boil. Add the shrimp to the pot and when the water returns to a boil, the shrimp should be done! The shrimp should be bright pink.

3. Immediately drain and place the shrimp into the ice bath to cool for 2 minutes. Peel the shrimp (leaving the tail-on.) Drain and serve with the cocktail sauce.

Grilled Shrimp Cocktail

Ingredients

Directions

1. Thaw shrimp, if frozen. Peel and devein shrimp, keeping tails intact. Rinse shrimp; pat dry with paper towels. Set aside.

2. In a small food processor bowl or a blender container combiner tomato, tarragon, lemon juice, garlic, salt, and pepper. Cover and process or blend with several on/off turns until mixture is coarsely chopped. Remove half of mixture (about 1/3 cup) to a small bowl and set aside. Process or blend remaining mixture until nearly smooth.

3. In a large plastic bag combine shrimp and the smooth tomato mixture. Seal bag. Marinate in refrigerator for 30 to 45 minutes. On 2 long metal skewers, thread shrimp, leaving a space of about 1/4 inch between pieces to allow for even cooking. Grill on rack of an uncovered grill directly over medium coals for 8 to 10 minutes or until shrimp are opaque, turning once. Remove shrimp from skewers and place them in a bowl. Toss shrimp with the reserved, coarsely chopped tomato mixture. Serve in individual cocktail glasses.

Makes 4 appetizer servings.
