"Beef's For Dinner"

 

It's almost time for school to start back and if you're like most homemakers, you're looking for something both nutritious and healthy for your family, that is easy to prepare. The following are two recipes that "fills the bill" on all three fronts. The recipes are from the Wyoming Cattlewomen and use ground beef, that is both economical and delicious. Enjoy these simple recipes, after a long day at school!

 

 

 

"Do-Ahead" Meat Loaf With Biscuit Topping

 

1 1/2 pounds lean, ground beef

1 cup chopped parsley
1 large onion, chopped

1 to 1 1/2 teaspoons salt

3/4 teaspoon Ac'cent seasoning
1/4 teaspoon pepper

1 1/2 teaspoons Worcestershire Sauce

1/2 cup fine bread crumbs

1 cup tomato juice

1 egg

1 can prepared refrigerated biscuits

Combine all ingredients, except the biscuits, mixing well. Shape meat mixture to form a loaf.
Form a pan from foil by tearing off a length of heavy-duty foil almost twice the length of the meat, and
place the meat on the foil, lengthwise. Press sides of foil up along the sides of meat loaf. Bring foil up at
ends, pressing center inward, and leaving two corners standing out, like wings. Bring corners together and
fold over twice to form a firm seal. This makes handles at each end for easy lifting.

Place foil covered meat on a baking sheet. Bake in 325 degree oven for 30 minutes. Remove from oven and
cool. Leave loaf covered with foil and place in the refrigerator.

Remove the meat from the refrigerator a half an hour before serving. Remove foil cover and place on baking sheet.
Bake for 20 minutes more in 325 oven, open biscuits and place them separate, rolling each in a finger roll. Arrange
shaped bisuits on top of meat and return to the oven at 425 degrees or 10 minutes, or until biscuits are golden brown.

Remove from oven and serve.

You may pour off meat drippings and serve as a gravy, if desired.

This is great served with green beans and/or carrots, a tossed salad, and your other favorite accompaniments.

Hobo Beef Supper

 

2 pounds lean ground beef

salt and pepper to taste

4 potatoes, cut in strips

6 carrots, split and quartered

4 onions, cut into thick slices

3 stalks celery, cut into 4-inch pieces

1/2 cup Ketchup (or chopped tomatoes, if desired)

2 tablespoons Worcestershire Sauce

2 tablespoons butter

2 teaspoon prepared mustard

juice of 1 lemon

1/2 cup vinegar

Season ground beef to taste with salt and pepper, and shape into 6 to 8 thick cakes. Place each beef cake in center of a square of heavy
aluminum foil. Divide prepared vegetables between the squares so that each portion is more or less equal. Pull foil up to form a
cup around the meat. Combine remaining ingredients in a saucepan, and bring to a rapid boil. Spoon about 1 tablespoon of the
hot sauce into each meat cup, then twist the cup edges together tightly.

Place foil packets in a shallow baking dish or pan.

Bake at 350 degree oven for 1 hour.

Reheat the remaining sauce and serve with the meat.

Great with tossed green salad, hot rolls, relishes and your favorite dessert.
