With a little over 60 days away, it was "food fit for kings and queens" at Wednesday's Lights of Life Gala Committee Meeting, as members of the committee were treated to the "royal" food that will be served at this year's Gala event, on January 15th. The lunch meeting, chaired by Tom and Pam Sellers featured a number of items to choose from, that will be selections for the meal at this year's gala and included appetizers, salads, entrees, sides, and a wonderful selection of desserts.

"I want a case of these crab cakes delivered to the bank!" commented Tom Sellers.

"And, I want to know when the delivery is to be made, so that I can intercept it!" cried Craig Roberts. "With enough of these, I won't want to eat anything else! Well, maybe I'll have some of those desserts, too!"

Aaron Evans from Eddie Dean Foods, the caterer again this year, was there to receive "feedback" on each of the items and to answer questions, relating to the food that will be served at the actual event. "Just bring it all on!" was the by-words that were circulating around the room, as samples of pork loin, roast beef with mushroom sauce, sea bass with mango sauce, the crab cakes, fire-roasted vegetables, stuffed mushrooms, molasses sweet potatoes, and pear, blue cheese, walnut, and spinach salad was being passed to those in attendance. Selections of various dressings for the salads were tasted and then Donna Hendricks, the dessert lady, began to pass the dessert trays around.

event, that will unfold on January 15th.

Desserts included: toffees, brittles, chocolate mousse squares, sugar cookies dipped in peanuts, chocolate covered strawberries, iced mini-muffins, and other delectable treats. "I think I need to try at least two of everything to make up my mind!" advised Gloria Mitchell.

"And, the hospital is right across the street, if we need admitting after eating all of this!" advised Tom Sellers.

Meanwhile, as members of the committee continued to sample food, reports were given on the progress of each of the standing committees. The Lights of Life, lighted float, is ready to be worked on for the Christmas Parade, December 4th.

The "Fly Your Flag" auction on Star Country Radio, raised $1525.00 and the University of Texas flag will be flying over Alliance Bank for one-week!

Kent Smith, with M&M Special Events, was on-hand to give an overview of the decorations planned for the event, and hinted at the "royal" touch that everyone will feel, once they enter the Hopkins County Regional Civic Center, on January 15th, and he added to expect beautiful red roses everywhere. He even brought one for each of the committee members to take home as a parting gift from the meeting.

And, Linda Burgin, Silent Auction Chairman, reported a long list of items donated for the silent auction and great response from those in the community, in donating items.

Pam Sellers and Jackie Thornton discuss some of the details of this year's Gala, as they have only about
60 days to prepare for the "Royal Evening!"

"Everything is progressing nicely and we want everyone to remember that this is only one part of the Lights of Life Campaign," reminded Pam Sellers. "We have the Tree Lighting Ceremony on December 2, at 6:00 p.m., in the Gardens at Memorial and want everyone to attend and purchase lights in memory or honor of their loved ones!"

Sellers also reported that there is a "waiting list" for those wanting to purchase tickets for this year's Lights of Life Gala, but hopefully there will be some cancellations, so those who haven't purchased their tickets, will still be able to attend. "Get put on the waiting list, now!" advised Sellers!

And, Polly Swatsell and Gloria Mitchell, go over some of the plans for the Christmas parade
float, to be entered by the Lights of Life Gala Committee.
