

Try Cauliflower Salad For a Refreshing

It's summertime and you hesitate to "heat up" the kitchen, and are looking for ways to use available vegetable to enjoy the fruits of the season. Well, try this refreshing cauliflower salad, that provides nutrition, while adding flavor and color to your table.

Cauliflower Salad
4 cups cauliflower florets
1 cup coarsely chopped green olives, with pimento
2/3 cups chopped green bell pepper
1/2 cup chopped onion
1/2 cup vegetable oil
3 tablespoons lemon juice
3 tablespoons red or white wine vinegar
2 teaspoons salt
1/4 teaspoon black pepper
1/2 teaspoon sugar
lettuce leaves for garnish
In a large mixing bowl, combine cauliflower florets, olives, bell pepper, and onion. Mixing well.
In another bowl, combine oil, lemon juice, vinegar, salt, pepper, and sugar, mixing well.
Pour oil mixture over vegetable mixture, tossing to coat vegetables. Refrigerate, covered,
four hours or overnight.
To serve, spoon marinated vegetable mixture into a salad bowl or plate
lined with lettuce leaves. Sprinkle with paprika (if desired for color).
Serves 8-10, and is great for taking to a "pot-luck!"
