Blackeyed Pea Salsa

Are you still looking for just another way to enjoy some blackeyed peas to make certain that you have good luck in 2010? Well, this easy recipe is a great way to consume just enough blackeyed peas, but to enjoy them in an entirely different way. Try the following recipe with your favorite tortilla chips or as a side dish to a number of complimentary meats. Make this one of your New Year's party favorites.

 

Blackeyed Pea Salsa

 

1 (15 oz.) can blackeyed peas, drained and rinsed

1  (11 oz.) can whole kernel corn
4 large tomatoes, chopped
1 avocado, peeled and coursely chopped
1 large green pepper, chopped

1 large jalapeno pepper, diced

1/4 cup fresh cilantro, chopped
1/4 cup freshly squeezed lime juice
2 tablespoons olive oil
1 teaspoon salt

2 teaspoons ground cumin

Combine all ingredients in a large bowl and toss gently.
Cover and chill in the refrigerator for 2 or more hours to let
the flavor blend.

Serve with tortilla chips or your favorite meat.
